
A spicy mix of flavours and chopped tomatoes make this curry sauce unique.
Ingredients
2 medium onions, chopped
1 fresh green onions, cut into 1-inch pieces
1 Celery, stalk, fresh, medium, sliced
1 medium garlic cloves, minced
1 tbsp grape seed oil
16 oz Tomatoes, red, whole, canned, unsalted, chopped
1/4 cup chopped parsley, minced
1/4 cup tomato puree
1 tsp fresh lemon juice
1/2 tsp salt
1/2 tsp hot pepper sauce
2 tbsp curry powder
1 cup fresh thyme, chopped (or 1/4 tsp, dried)
3/4 lb raw medium shrimp, cleaned
1/2 tsp black pepper, fresh
1 tbsp light honey
Directions
In a large skillet, sauté the green onion, celery, garlic, and onion in oil until the vegetables are tender. Stir in the tomatoes, tomato puree, lemon juice, hot sauce, curry powder, and thyme. Cover and bring to a boil, then reduce the heat and simmer for 30 minutes. Add the shrimp, parsley, salt and pepper, and re-cover. Then simmer for 5 more minutes or until the shrimp has turned pink.

This recipe is delicious served over a healthy whole grain such as brown rice.
