
Sour cream and curry combine with golden raisins, shrimp, and fruits for a satisfying summer salad.
INGREDIENTS
Dressing
• 1 cup dairy sour cream
• 2 tablespoons lemon juice
• 2 teaspoons sugar
• 1-1/4 teaspoons curry powder
• 1/4 teaspoon salt
Salad
• 4 medium fresh ripe peaches, divided
• 4 fresh ripe plums, sliced
• 1/3 cup raisins
• 1/2 pound medium shrimp, cooked and shelled
• 1/2 fresh pineapple, cut into short spears reserving juice or 1 can pineapple chunks, reserving juice
• 1 bunch green or red leaf lettuce
• 2 green onions, sliced diagonally
PROCEDURE
In small bowl, combine all ingredients for dressing; cover and chill. Cut 2 peaches into large chunks and combine with plums, raisins and shrimps in large bowl. Toss to coat with small amount of pineapple juice. Line individual salad plates or large serving platter with lettuce leaves. Mound fruit-mixture in center. Slice remaining nectarines; dip in pineapple juice and arrange along with pineapple spears around fruit-mixture. Sprinkle green onions over all. Serve with dressing.
